I love to entertain and share wonderful food with friends and family. There is nothing better than a quick and delicious appetizer that you can whip up in literally a few minutes. I mean who doesn’t love a recipe that reduces hosting stress. You all know what I am talking about! ; ) These little bites of heaven you can prepare beforehand so you can actually enjoy your guests.
It helps to have a recipe like this one in your entertaining arsenal. The fresh strawberries and creamy goat cheese bring a delicious juxtaposition of flavors to your table. A mélange of savory and sweet with fresh spring ingredients. Add some fresh basil for a delicious herbaceous twist. These are light enough for your spring and summer get togethers.
I have served these crostini several times over the years, it is practically effortless, looks amazing and tastes divine.
Ingredients:
- Loaf of take and bake French bread (baguette)
- 8oz Goat Cheese (softened)
- Fresh Strawberries
Balsamic Glaze Ingredients:
- 2 Cups balsamic vinegar
- ½ Cup Brown Sugar
Directions:
Bake and slice the French baguette, let cool a bit otherwise it will be too soft to spread the goat cheese on.
While bread is baking mix balsamic vinegar with brown sugar in a saucepan over medium heat. Stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon. There will be a lot of glaze left over but it can be used on chicken and in salads, etc.
Spread a bit of goat cheese on the baguette slice.
Top with sliced strawberries and drizzle the balsamic glaze over the crostini.
