Here I go again craving something SPICY and delicious. It is finally getting to be soup weather, and by AZ standards that means below 70 degrees at night!
I get asked quite often for recipes that are health conscious and full of protein from a good friend that owns her own dancer sculpt program here in PHX. I had the pleasure of taking a few of her classes and it really is such a fun way to get exercise in. However next to a professional dancer I am certainly not the most graceful. Weights, no problem. Cardio, check! But dance choreography definitely not my forte. I still had fun though! So Paulina, here you go this one is for you girl!
Trying to find a hearty soup recipe that does not wreck your workout routine can be a bit of a challenge but this soup certainly delivers. With tender shredded chicken for protein and Avocados for healthy fats this low calorie soup will not derail your workout progress.
Chicken Tortilla Soup Ingredients:
- 1T Avocado Oil
- 2 Garlic cloves, minced
- 1/2 Can of tomato paste
- 1 Can diced fire roasted tomatoes with liquid (from a 15-ounce can)
- 4 teaspoons chili powder
- 8 Cups Chicken Broth
- Salt and Pepper to taste
- Shredded rotisserie chicken (2 cups)
- 1 Avocado, thinly sliced
- 2 Ounces cojita cheese, crumbled (1/3 cup)
- 1/4 Cup fresh cilantro leaves
- 2 Green onions thinly sliced
- Tortilla strips or crushed tortilla chips
Directions:
In a large pot heat the avocado oil over medium-high. Add garlic and cook until fragrant, 30 seconds. Add tomato paste, diced tomatoes, chili powder and cook until most of liquid is evaporated, 2 to 3 minutes.
Add chicken broth and bring to a boil. Season with salt and pepper.
Divide chicken, avocado, cojita cheese, cilantro, and green onion among bowls.
Top with broth and tortilla strips.
