Can we talk about snacks for a bit. I know I am not the only mom out there that struggles to get her kids to snack healthy. It is a constant battle over chips, cookies and candy versus fruits and vegetables in our household. I know you feel me!! Yes, the struggle is real!! Much less being a busy mom just trying to stick to a solid nutrition and fitness routine without grabbing something from the pantry or falling victim to the work breakroom that always seems to have some sort of bad for you but great tasting foods like doughnuts!
My sweet friend Kari shared this recipe with me when I commented how tasty they looked on her FB post one day. She is a total rockstar making these on a day that she was doing a nutritional cleanse. Not only do we work out at the same gym but we have similar fitness goals, love to talk about nutritious food and protein smoothie ideas. She is such a motivator!
These little bites of peanut butter dark chocolate heaven are to die for!!! They are super simple to make, packed with protein and taste like an indulgent treat. They literally taste like peanut butter fudge with dark chocolate chips sprinkled throughout.
I grab one of these bites as an indulgent treat in the afternoon when the sugar cravings hit me, plus the protein helps to fuel my after work gym time.
Ohhh and did I mention that my son gobbles these up like no tomorrow! Now that is a win win snacking situation!
Ingredients:
- ¾ Cup of Vanilla Protein Powder (find a top quality undenatured whey one- I can recommend the one I use just message me)
- 3 Tablespoons of Creamy Peanut Butter
- 1 tsp Honey
- 2-3 Tablespoons of Vanilla Almond Milk
- ¼ to ½ Cup of Dark Chocolate chips -depending on how much of a chocoholic you are! ; )
Directions:
Measure all ingredients into a large bowl. Mix until thoroughly incorporated. If mixture is a bit dry add a splash of almond milk. Too wet, add a pinch of protein powder.
Take a spoonful of dough and roll into a ball, continue with the rest of the mixture.
Store in refrigerator for up to one week.
