Taco Tuesday!!! About a year ago my family started implementing it into our weekly menu. My kids loved it for about a month until you have eaten every kind of meat taco and started repeating again it can get quite monotonous .
While going through some different ideas my son mentioned to me that he really likes beef in his tacos above the other meat options. One morning when I was prepping the crock pot for some slow cooked beefy taco goodness I realized that I had neglected to pick up one of the main ingredients for the recipe I was planning to make. So in true improvisational mode I frantically was searching in the pantry for something to throw together. I found a jar of salsa verde. So the experiment began. I sliced up onion placed the beef roast on top and poured the jar of Salsa Verde over the beef and set the crock pot timer.
8 hours later immediately when you walked in the door the smell was amazing! My kids were actually excited to eat what I was cooking for once! The beef shredded so perfectly and was seasoned to perfection by the salsa verde. 3 ingredients, one crockpot, 8 hours of cooking how simplistic is that for an amazing meal!
Salsa Verde Shredded Beef Tacos Ingredients:
- 3 pound boneless beef roast
- 1 yellow onion sliced
- 1 jar of Salsa Verde
- Cilantro
- Cojita Cheese
- Avocado (sliced)
- Mini corn or flour tortillas
Directions:
Slice onion and place on bottom of slow cooker
Place Beef roast on top of onions and pour entire jar of Salsa Verde over the beef.
Set Slow Cooker to 8 hours on low
When beef is finished cooking shred with two forks in the slow cooker
Serve beef in tortillas and sprinkle with Cilantro, Cojita cheese and sliced avocado if you desire
