Kale, ohh how I used to loathe thee. Now I am obsessed with kale, in soup, salads and don’t forget Kale chips! This Kale Caesar Salad with Toasted Walnuts is the perfect winter salad. Add some grilled chicken and you have a complete tasty meal ready in no time.
The first time I ever had kale my sister had prepared it for me sauteing it with balsamic vinegar. I could not get over the bitter taste, definitely was not a favorite of mine. Fast forward about 10 years and now I can’t stop eating it. Funny how our palates change over time. That, and the method of preparation plays a big role.
This Kale Caesar Salad with Toasted Walnuts has great texture and crunch from the walnuts and citrusy flavor from the homemade Caesar Dressing. After I made this for the blog I literally ate this for lunch every day one week with added chicken for protein. OBSESSED!
Now when making this salad take note that I used Lacinato Kale or Tuscan kale. This kale is not as ruffly as your standard kale and has thicker leaves. Perfect for holding the dressing and not wilting. You can also mix in some regular more delicate kale to give the salad even more texture. Plus the different shades are just so green and pretty!
This salad is ready in literally no time! Toasting the walnuts takes the most time at 4 minutes and you are pretty much done! A super simple salad recipe that is packed with leafy green goodness!

Ingredients:
- 2 Bunches of Lacinato or Tuscan Kale, washed, stems removed and leaves shredded
- 6 oz Walnuts, halved and toasted
- 4 Tb of Caesar Salad Dressing Recipe- Get Recipe Here!
- 1 oz Parmesan shaved
Directions:
On a cutting board take the bunches of kale and remove the stems. Cut the leaves into ribbons, do not chop.
In a small skillet over medium to low heat lightly toast the walnut pieces approximately 4 minutes. Gently tossing so they do not burn.
In a large serving bowl combine the prepared kale with the Caesar Salad Dressing and toss to coat.
Sprinkle toasted walnuts over salad and add shaved Parmesan.
Serve and enjoy!
