Summers get so hot here in Phoenix that sometimes all you want for dinner is a light, healthy, refreshing meal that does not require an oven. These Quinoa Glow Bowls with Tahini Lemon Dressing are the perfect veggie and protein packed meal all in one bowl!
I love these bowls because the prep time is minimal and they are super easy to assemble. You can cook the quinoa a day or so before hand and by using a store bought rotisserie chicken no firing up the grill or heating up the oven. The veggie prep is super easy too unless you want to get a bit fancy and try your hand at avocado roses and squash spirals like I did for this recipe. Not gonna lie avocado roses can be a bit tricky to learn but are super gorgeous in dishes!

Ingredients:
- 1 Cup Tri Color Quinoa, cooked
- 1 Zucchini, Spiralized
- ½ Yellow squash, sliced with a vegetable peeler into thin ribbons
- 1 Large Carrot, Spiralized
- 1 medium avocado, sliced
- 1 Cup Shredded Rotisserie Chicken Breast
- ¼ Cup Roasted Pepitas
- Black Sesame Seeds, for garnish
- Cilantro, chopped for garnish
Dressing Ingredients:
- 1/2 Cup Roasted Garlic Tahini
- 2 cloves garlic
- 4 Tablespoons Lemon juice
- 1/4 Cup water
- sea salt and black pepper, to taste
Directions:
Cook Quinoa according to package instructions and prepare vegetables as described in ingredient list.
To assemble bowls put ½ a cup of cooked quinoa into bowl, top with nests of spiralized zucchini and carrot. Then Sliced avocado, rotisserie chicken and yellow squash ribbons. Garnish with Black Sesame seeds and cilantro. Drizzle the dressing over top just before serving.
To make the dressing place all dressing ingredients into a high speed blender or food processor. Blend until creamy, if dressing is too thick gradually add water until it is a consistency that is easy to pour.
