Happy Spring everyone! It is hard to believe that it is already March. As the days start to get longer and warmer, I start to crave lighter dishes. The farmer’s markets have an abundance of fresh asparagus right now and I thought what better for my spring collaboration post than to pair a light and fresh pasta dish with Paradigm Rose of Merlot.
This Rose of Merlot is my go to spring and summer wine. It is a brilliant salmon pink wine with clean fresh aromatics of strawberry and delicate rose petals. It is refreshing, bright, and crisp. Perfect for pairing with dishes involving seafood or just relaxing by the pool!
This Asparagus Gnocchi and Shrimp can literally come together in less than 30 minutes. Yes, you heard me right 30 minutes! Which makes it a nice weeknight meal and is an equally impressive dish for company especially when paired with the Paradigm Rose.

Ingredients:
- 1 Tablespoon Extra Virgin Olive Oil
- 2 Medium cloves garlic, minced
- 1 Pound asparagus, cut into 1 1/2-inch pieces
- 1 Cup heavy cream
- 2 Ounces grated Parmigiano-Reggiano cheese
- Sea salt and freshly ground black pepper
- 1 Pound Gnocchi (I used DeLallo packaged Gnocchi)
- ½ Pound raw shrimp tail on and deveined
Directions:
Set a pot of salted water over high heat.
Meanwhile, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook, until opaque and pink about 2 minutes total. Remove from pan and set aside on a plate.
In the skillet add garlic and cook, stirring, until fragrant, about 1 minute. Add asparagus and cook, stirring frequently, until asparagus is just starting to turn tender, about 2 minutes.
Add heavy cream and half of Parmesan. Cook, stirring, until cream thickens and coats the asparagus pieces, about 4 minutes. Season to taste with salt and pepper.
Add gnocchi to now-boiling pot of water, stir gently, and cook per package directions.
Drain gnocchi, reserving 1/4 cup of pasta cooking water. Add gnocchi and 2 tablespoons of cooking water to saucepan with sauce and bring to a hard boil, stirring gently. Add more pasta water to thin sauce to desired consistency. Serve immediately, topped with shrimp and additional Parmesan cheese.
