I just love anything that has to do with the Mediterranean region whether it be food, wine or simply the laid back culture itself! This salad takes me back to my summers in Marseille with my fabulous sister from another Mr.! We were a part of a foreign exchange program at the age of 10 and that is when my love of Mediterranean food began. This is such a bright fresh summer salad that can be a perfect side or add some protein such as grilled chicken or Tuna to make it a main dish. In France they eat it with Tuna, me I am not particularly fond of Tuna so I prefer the grilled chicken option. The arugula adds a nice peppery flavor, but if you are not a fan of arugula you can use spring mix as well.
The dressing is simple, packed with flavor and healthy fats from just 3 ingredients. You can not get any simpler than that. I recommend keeping the dressing separate and adding to each serving as the dressing will separate.
I hope that when you eat this salad you develop a love for Mediterranean food as well.
Mediterranean Salad Ingredients
- Arugula
- Spinach
- ½ Cup whole kernel corn (unsalted)
- 1 large Tomato diced
- ½ Cup cooked Quinoa (cooled)
- ¼ Cup crumbled Feta Cheese
Directions:
Mix spinach and arugula in a large bowl. Add all ingredients together in same bowl and toss to incorporate.
Dijon Dressing
- ½ Cup Extra Virgin Olive Oil
- 4-6 Tablespoons of Dijon Dressing (depending on your desired flavor in the dressing)
- Ground Black Pepper to taste
Directions:
Wisk Dijon and pepper into olive oil. The dressing will separate a bit so you will need to stir again before adding to the salad.
