I have always tended to stay away from cooking Asian food because I thought that it was just too difficult with a lot steps. I found out with this recipe it does not have to be, this is Asian cuisine simplified. This is the simplest recipe, cooked in a slow cooker so you just set it and forget it.
I have become a bit obsessed with slow cooker meals lately, with a typical evening in our household consisting of some sort of sports practice, gym and homework it is nice to come home and have dinner practically ready for you. The chicken absorbs the salty sweet flavors of the marinade and shreds beautifully from slow cooking all day. Served over a bed of Lemongrass Cilantro rice the flavors are bright and distinctive.
Honey Sesame Chicken with Lemongrass Rice Ingredients
- 2 lbs boneless, skinless chicken breasts whole
- 1 cup honey
- ½ cup low-sodium soy sauce
- ½ tsp sesame oil
- 2 tbsp olive oil
- 1½ tsp minced garlic
- 2 tbsp minced onion or onion powder
- ¼ cup barbecue sauce
- ¼ tsp crushed red peppers
- Green onions, sliced
Directions
Place whole chicken breasts into Crock Pot arranged in a single layer if possible. (If you have a smaller crock pot then cut up the breasts into strips and layer)
Mix together honey, low-sodium soy sauce, sesame oil, olive oil, garlic, onion, barbecue sauce and crushed red peppers in a small bowl.
Pour the sauce mixture over the chicken and stir to coat.
Cook on low for 6-8 hours.
Shred the chicken in the slow cooker so all pieces are coated with the sauce
Serve over Lemongrass rice. Sprinkle with sliced green onions.
Lemongrass Rice Ingredients
- 1 Cup Basmati Rice
- 2 Cups water
- 1 Tablespoon Coconut oil
- ¼ Cup Chopped Cilantro
- 5-7 drops Lemongrass essential oil – You can purchase Lemongrass Essential Oil through this link: To order Lemongrass Essential Oil
Directions
Cook Rice per package directions adding the Tablespoon of Coconut oil to the water while boiling.
When there is about 5 minutes left for the rice to cook add the Lemongrass oil. This is a strong oil so add more or less depending on the level of flavor you would like. It is easy to over do it so start with 2-3 drops then taste and until you reach your desired amount of flavor.
Stir in Cilantro just before serving.
