Strawberry Pink Lemonade Mimosa

Hello my name is Jillian and I LOVE Prosecco and fully admit it!  Any time I get the chance to create a cocktail that involves Prosecco I am all in.  This recipe for Strawberry Pink Lemonade Mimosa are the perfect twist on a traditional mimosa with a slight tang.  Perfect for serving your mom this Mother’s Day!

I will have to be honest I am not a huge fan of the traditional mimosa.  A lot of times restaurants make them with an orange juice that has too much pulp and I feel like I am picking orange pieces out of my mouth all morning.  That is why I am loving all of the mimosa versions that are popping up all over my social feeds lately.

This combination of pink lemonade, strawberry vodka and Prosecco makes a subtly tart and not overly sweet cocktail that you can sip on and enjoy all through brunch.  Not only are they tasty but super simple to make.

Pro tip:

Use a good quality Prosecco like Lamarca it is balanced, not too sweet or dry.

How to make a Strawberry Pink Lemonade Mimosa:

1. Pour 2oz of Pink Lemonade and 1oz of Strawberry vodka into champagne glass
2. Top off with chilled prosecco
3. Enjoy!

Ingredients:

• 1 bottle of Prosecco
• 4 oz Strawberry flavored vodka
• 12 oz of Pink Lemonade (I used Simply Lemonade with Strawberry)
• Lemon slices and strawberries for garnishing

Instructions:

Pour 2 oz of Pink Lemonade and 1 oz of Strawberry vodka into Champagne flute and top off with chilled Prosecco.

Garnish with a lemon slice or twist.
