Fall baking is in full effect and what better dessert to try than one infused with Whiskey. This recipe for Whiskey Infused Apple and Pear Cobbler combines all the favorite flavors of fall with a kick of Whiskey flavor from an unusual ingredient.
I love when recipes use non traditional ingredients, they just keep you on your toes when it comes to flavor. Who would have thought that using a vinegar in a baked cobbler would yield such delicious results.

By incorporating this Whiskey Infused Vinegar it adds a wonderful tang and an acidic element that balances out the sweetness of the apples and pears. Typically when I add vinegar to a recipe it is in a marinade or salad dressing but I wanted to be a bit adventurous with its flavor, hence using vinegar in a baked dessert.
The sweet and tangy whiskey infused fruit filling is topped with a pecan dough that just melts in your mouth. The slight crunch of the pecans in a pillowy dough on top of some sweet syrupy baked apples and pears. Sooo good!
How to make Whiskey Infused Apple and Pear Cobbler:
Step 1- in a 10 inch cast iron skillet whisk all filling ingredients together and bring to a boil. Then reduce heat and simmer for 5 minutes.
Step 2- In a large mixing bowl, make the topping by mixing all topping ingredients together until a dough is formed.
Step 3- Top hot fruit mixture with topping by heaping spoonful.
Step 4- Bake at 350 degrees for 18 minutes.

Ingredients:
For the Filling:
- ¼ C. Sugar
- 2 Tb Brown Sugar
- 2 Tb all purpose flour
- ½ tsp ground Cinnamon
- ½ tsp ground Ginger
- ¼ tsp Cardamom
- 1/8 tsp salt
- 1 ¼ C Apple Cider
- ¼ C Whiskey Vinegar
- 2 C Gala Apples, diced
- 2 C Bartlett Pears, diced
- 1 Tb butter, cubed
For the Topping:
- 1 ¼ C all purpose flour
- 2/3 C pecans, finely chopped
- 1/3 C Sugar
- 1 ¼ tsp baking powder
- ½ tsp salt
- 2/3 C Buttermilk
- 3 Tb butter, melted
Instructions:
Preheat oven to 375 degrees.
For the filling use a 10 inch cast iron skillet and whisk together the sugar, brown sugar, flour, cinnamon, ginger and salt. Whisk in the apple cider and Whiskey Vinegar. Add the diced apples and pears stirring to coat.
Bring the mixture to a boil over medium high heat. Reduce to low heat and simmer for 5 minutes. Remove from heat and dot with 1 Tb butter.
While mixture is simmering make the cobbler topping. In a large mixing bowl, whisk together flour, 1/3 C pecans, sugar, baking powder and salt. Stir in Buttermilk and melted butter until combined and dough is formed.
Drop dough mixture by large spoon full onto hot filling. Sprinkle with remaining pecans.
Bake for 18 minutes until golden brown. Let sit for 10-15 minutes before serving.

For the Filling:
