So what did you all make for your Thanksgiving desserts? I typically like to stick to the family favorites, but this year I wanted to add something different to the menu. Bourbon Pecan Pie!!
I am so glad I did because this pie is OUTSTANDING!!!! I mean Bourbon and brown sugar filling! Come on now! I couldn’t stop eating it and neither could my niece. She loved it so much that she asked if I would bake her birthday cake and this pie for her birthday in June.
This is the kind of pie that you make only a few times a year because let’s admit it if you are anything like me and like your sweets you will eat the whole darn thing. Bit by scrumptious bit!
There is just no way to describe all of the goodness that is this pie. A rich gooey sugary layer topped with toasted pecans baked to perfection. I just may have to grab a leftover piece, like now! This pie is definitely going to be added to the Christmas Dinner menu for sure!
Bourbon Pecan Pie Ingredients:
- 2 store bought pie crusts
- 6 large eggs
- 1 Cup (packed) dark brown sugar
- 1 Cup (packed) golden brown sugar
- 1 1/3 Cups light corn syrup
- 1/2 Cup (1 stick) unsalted butter, melted
- 1/4 Cup bourbon (such as Bulleit)
- 1 teaspoon coarse kosher salt
- 4 Cups (about 16 ounces) pecan halves, toasted and coarsely chopped
Directions:
Preheat oven to 350 degrees.
Roll out pie crust and place in pie dish cutting off excess and crimping the edges to give a nice scalloped edge.
Whisk eggs in a large bowl. Then whish in both sugars and the next 5 ingredients.
Stir in pecans.
Divide filling mixture between the 2 pie dishes.
Bake pies until filling is just a bit puffed up and set in the center. About 55 minutes.
Remove from oven and cool pies on racks.
Note: These pies can be made a day ahead of serving.
Serve with store bought or home made whipped cream. I made a Bourbon whipped cream to accompany this pie. Recipe below.
Bourbon Whipped Cream Ingredients:
2 Cups Heavy Whipping Cream
1/4 Cup Powdered Sugar
2 Tablespoons Bourbon
Directions:
Use a stand mixer or hand mixer and on high whip up the whipping cream until light and fluffy. Gently stir in the powdered sugar and bourbon. Serve immediately.
