The iconic holiday gingerbread cookie has received an upgrade in this recipe for White Chocolate Dipped Gingerbread Cookies. We were challenged to create holiday recipes using both traditional and non-traditional spices. Some pretty amazing recipes have been contributed so far!
Traditional gingerbread cookies, to me they just embody the Christmas holiday. The festive shapes and decorative icing make them a part of many families traditions. It is a cookie that reminds me of Christmases in Chicago when I was growing up. Every year my grandmother would make several kinds of Christmas cookies and store them in tins on her screened in back porch. One of my fondest holiday memories is sneaking out to the porch, the snow falling outside, while me and my cousins are trying to open every tin to determine which one housed our favorite cookie type. All while freezing our little behinds off. My favorites were always her Gingerbread cookies. The spices and molasses flavor with the sweet sugary icing, I just couldn’t get enough!
Gingerbread are still my favorite holiday cookie, but the process of chilling the dough, rolling out, cutting, etc was a bit time consuming. So what if I altered the recipe a bit to be a drop cookie with those same iconic flavors. This recipe for White Chocolate Dipped Gingerbread Cookies has all of the fantastic, Cinnamon, Ginger and Molasses flavor of the original but you can make a batch in less than an hour!
These cookies bake up so soft they literally melt in your mouth. The addition of the White Chocolate coating gives the cookie that sweet flavor to accompany the spice.

Ingredients:
- ½ cup butter, softened
- ½ cup sugar
- ½ cup light brown sugar
- 1 egg
- 1 tsp vanilla extract
- ¼ cup molasses
- ½ tsp cinnamon
- ⅛ tsp ground cloves
- ⅛ tsp ground nutmeg
- ½ tsp ground ginger
- ½ tsp salt
- 2 cups flour
- 1 tsp baking soda
For the cinnamon sugar coating:
- ½ tsp cinnamon
- 3 Tbs sugar
For the White Chocolate Candy Dip:
- 1 bag White Chocolate Candy Melts
- Decorative Sprinkles
Instructions:
Preheat your oven to 350 degrees.
Using a mix master cream together your butter and sugars until light and fluffy.
Mix in your egg, vanilla and molasses.
Stir together for about 2 minutes until mixture turns a light brown color.
Add in remaining ingredients and mix together until just combined.
Mix together your cinnamon and sugar topping.
Using a cookie dough scoop, take 1½ – 2 Tbs of dough and roll into a ball.
Roll your dough ball into the cinnamon sugar mixture.
Place cookie dough onto a cookie sheet lined with parchment or a silicone liner.
Slightly press down and flatten each cookie.
Bake for 8-9 minutes until cookies are a bit crinkly on top.
Remove from oven and allow cookies to cool for 2 minutes on cookie sheet before transferring to a cooling rack to cool completely.
While cookies are cooling, melt candy melts per instructions.
Dip each cookie half way into white chocolate candy melts.
Place cookies on parchment paper.
Top with festive sprinkles.
Allow to set until chocolate is hardened completely.
