Another week and another recipe challenge! Tresomega Nutrition challenged me to make a healthy dessert using their Coconut Oil and I rarely turn down a challenge. So here is the delicious result, Dark Chocolate Butterscotch Oat Bars! Perfect for after school snacking or heck whenever!
Tresomega Nutrition’s coconut oil is really the secret to making these Dark Chocolate Butterscotch Oat Bars so perfectly moist and perfectly crumbly. Who knew that Coconut oil is a great substitute for butter or other fats in baking! I certainly did not until researching for this challenge. I mean I use coconut oil in my protein smoothies in the morning or sometimes in an espresso for a pseudo Bulletproof coffee, but for baking, never. Not sure why though, since it is a simple 1:1 substitution ratio for Butter and Coconut Oil.
Not only does coconut oil taste amazing but there are some pretty amazing health benefits to baking with coconut oil. Coconut oil is high in natural saturated fats which increase the healthy cholesterol in your body, it also helps promote heart health. So in a nutshell, coconut oil pretty much is a rockstar food.

Now let’s get back to these delicious bars shall we. Super simple to make, one bowl, one mixer and one pan! Five minutes to mix the dough up, twenty five to bake and VOILA! The most delicious healthy-ish Dark Chocolate Butterscotch Oat Bars fresh out of the oven by the time you get done washing that one bowl. Not to mention they are loaded to the MAX with dark Chocolate and Butterscotch chunks, WHAAAT!! I know crazy right, but ohhhh so good!

Ingredients:
- 2 1/2 Cups old fashioned oats
- 1 Cup all-purpose flour
- 1 Cup white whole wheat flour
- 1 Cup light brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 Cup melted coconut oil (I used Tresomega)
- 2 eggs
- 1 Tablespoon vanilla
- 8 ounces dark chocolate chopped into chunks (about 1 1/2 cups)
- ½ Cup Butterscotch chips
Instructions:
Preheat oven to 350 degrees.
Line a 9×13 inch baking dish with parchment paper.
In the bowl of a stand mixer, add the oatmeal, flour, brown sugar, baking soda, salt, melted coconut oil, eggs and vanilla and mix until combined and the dough holds together. The dough will seem oily, that is a good thing.
Mix in about 1 cup of the dark chocolate chunks and ¼ Cup of the Butterscotch chips.
Place half of the dough into the prepared pan, pushing the dough down to compact. Sprinkle on the remaining dark chocolate chunks and Butterscotch chips, then place the remaining half of the dough over the chunks.
If desired you may even add more chocolate and Butterscotch to the top, I did in this batch!
Bake for about 20-25 minutes, do not over bake. Underdone is always better in my opinion but I like soft and chewy cookies/bars.
Allow bars to cool in pan for at least 30 minutes before slicing and serving.

I still have not baked with coconut oil. It’s just that the fad here is coconut flour for baked goods and coconut oil is more of a beauty product. Although I know a lot of friends in south India who use it in their cooking but not in baked goods. I think I should try this sometime to see how the result will be.

Like you, I have begun experimenting with replacing butter in baked goods with coconut oil, and it’s amazing. I thought that jar looked amazing, and it’s the same brand that I picked up last time I bought coconut oil. This recipe looks great, and I’m eager to try it, but the instruction to wait 30 minutes before cutting into them might be impossible with them looking and smelling so good. We’ll do our best, though.
