First and Foremost, What is a Mole Sauce?
Mole is a traditional sauce typically used in Mexican cuisine. The original recipe calls for over 20 ingredients, yes you heard me right 20! Including chocolate, Whaaat chocolate in a spicy dish, yes, and it is delicious too! While I enjoy the original I thought there had to be a simpler way to make a Mole sauce with less ingredients, a simpler process all while keeping the main flavor profile. While this recipe is far from authentic or traditional it is undoubtedly delicious.
Incorporating chocolate into a spice savory sauce and making it taste fantastic is not an easy task. It’s a very strange combo but my friends over at Oil & Vinegar had the perfect solution a Chocolate Olive Oil! This chocolate extra virgin olive oil has the flavor of melted milk chocolate. The oil is very mild and fruity so it is the perfect ingredient in baked goods and of course Chicken Mole!

So How do you Make Instant Pot Easy Chicken Mole Tacos?
Prep your Instant Pot with a bit of Chocolate olive oil on the bottoms and sides so the chicken does not stick and burn.
Arrange the chicken in the Instant Pot.
Place the sauce ingredients into a blender or food processor, process until smooth, then pour the whole thing right over the chicken.
Cook the chicken for a short and sweet 15 minutes of pressure. Chicken will be extremely tender and shreddable.
Reduce the sauce on the saute setting for about 10 minutes.
Add the shredded chicken back into the sauce, stir, and voila! Seriously delicious Chicken Mole!

Ingredients:
- 1/2 Tablespoon Chocolate Olive Oil from Oil & Vinegar, plus extra to coat the inside of the Instant Pot
- 1 Small yellow onion, diced
- 2 Cloves garlic, minced
- 1 Can fire-roasted diced tomatoes
- 2 Chipotle peppers in adobo sauce
- 1 Tablespoon adobo sauce from the can of chipotle peppers
- 1/4 Cup raisins
- 2 Tablespoons unsweetened cocoa powder
- 1 teaspoon Sea Salt
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 3 Large boneless skinless chicken breasts
- Cilantro, chopped for garnish
- Cojita cheese, crumbled for garnish
- Tortillas of choice
Instructions:
In a blender or food processor blend the onions, add the canned tomatoes, chipotle peppers, adobo sauce, raisins, cocoa powder, salt, cumin, and cinnamon. Blend until smooth.
Lightly coat the Instant Pot with Chocolate Olive Oil and place the chicken in the Instant Pot. Pour the sauce over the top and do not stir. Cover and seal the Instant Pot so that it does not vent steam. Cook on poultry setting for 15 minutes (for frozen chicken breasts) or 10 minutes (for thawed chicken breasts ). Vent immediately, do not let it naturally vent.
Remove the chicken to a cutting board and shred using two forks.
Turn the Instant Pot to Saute and bring the sauce to a simmer. Stir occasionally until sauce thickens about 8-10 minutes. The sauce will splatter so be sure to cover the Instant Pot with a paper towel to contain the mess!
Once the sauce has thickened return the chicken to the pot and toss.
Serve in your favorite taco shells or as a burrito with your favorite fixings!
