As I am sure with all of you there have been many family and friends coming and going from my house this past week. One of the things that can make meal prepping difficult is when food sensitivities come into play. Luckily I have not had to alter my everyday diet due to food sensitivities in my immediate family, but for many it is a constant struggle.
Well perfect timing as a recipe challenge came my way to utilize Gluten Free Quinoa Pasta! In order to accommodate a Gluten intolerance for a visiting family member I decided to make a delicious savory pasta dish with Quinoa Pasta from Tresomega Nutrition. On busy weeknight’s I need something that’s super easy to make and can be successfully reheated for a few days while staying tasty for lunches. Boom. Butternut Squash, Kale and Chicken Sausage Pasta!
I have been loving roasted butternut squash in my meals this fall! I think I roast up some squash every week and throw it into salads or as a side with chicken, it is so easy and let’s just face it YUMMY! So of course I wanted to incorporate butternut squash into this pasta dish somehow.
Now cutting up a butternut squash is not the easiest of tasks so I have to admit I resort to the already peeled and diced squash in your produce section. It literally cuts 15 min off of my prep time. Hence stressing the desire for an easy meal!
The savory blend of roasted Butternut Squash with kale and sweet Italian Chicken sausage encompasses all great fall flavors. Plus the fact that you can have this on your table in less than 30 minutes while only dirtying two pans is a huge plus!
Try out this Butternut Squash, Kale and Chicken Sausage Pasta on a busy weeknight and enjoy my friends!
Ingredients:
- 1lb Tresomega Quinoa Penne Pasta
- 1lb Ground sweet Italian Chicken Sausage
- 1 butternut squash, diced
- 2 tablespoons olive oil, divided
- 1 tsp Poultry Seasoning
- 3 cloves garlic, minced
- 2 bunches kale, stems discarded and leaves torn
- 1 cup finely shredded Parmigiano Reggiano
- Sea Salt and ground black pepper, to taste
Directions:
Preheat oven to 400°F. Spread diced butternut squash in an even single layer on a baking sheet covered in aluminum foil. Drizzle with 1 Tablespoon olive oil, season generously with salt and ground black pepper, toss to coat. Roast in oven until tender, about 20-30 minutes.
In a large skillet over medium high heat, heat 1 tablespoon olive oil. Add ground chicken sausage and cook, using a wooden spoon to break up sausage into bite-sized pieces, until meat is fully browned, about 5 minutes. Add garlic and poultry seasoning.
Add kale (in batches if necessary since it will wilt down as it heats) to the chicken sausage mixture and cook, stirring occasionally, until all kale is soft and wilted, about 5 minutes. Season with sea salt and black pepper. Fold in the roasted butternut squash carefully as to not mush the squash.
While cooking the sausage and vegetable mixture, bring a pot of salted water to a boil. Cook the penne according to package directions for “al dente” pasta and drain, reserving 1 cup of the pasta water.
Add pasta, reserved pasta water, and Parmigiano Reggiano to the sausage and vegetable mixture. Stir to combine flavors.
Serve and grate extra Parmigiano Reggiano on top.

Yum a colorful vibrant pasta for the eyes and the senses. I wish I could get butternut squash that easily here, I would make this pasta dish tomorrow otherwise. We get a good selection of gluten-free ready made pasta here, and I do like the flavor for a change. That’s why I enjoy seeing more and more gluten-free pasta dishes online.
