I know it is a mouthful to say but it is sooo worth taking the time to bake! I would have never guessed ever that Pumpkin and Peanut Butter would be a good match in baked goods, but boy has this recipe changed my mind on that one. They are definitely a match made in baking HEAVEN!
I have seen some pretty interesting flavor partnerings in my time that were quite questionable but whoever decided to bake peanut butter and pumpkin together is a genius. Ohh and don’t forget the dark chocolate goodness that is speckled throughout and on top of this delectable little loaf!
Immediately when you whisk the pumpkin and peanut butter together the look and smell of the batter is just divine, I don’t know any other way to describe it.
This recipe does not contain any butter or oil so it is a healthier rendition of a quick bread. With the addition of peanut butter you also get a protein kick! Perfect for breakfast or a post workout snack!
Ingredients:
- 1/4 Cup Greek yogurt
- 3/4 Cup Pumpkin puree
- 2 eggs
- 1/2 Cup Creamy Peanut butter
- 1/4 Cup Sugar
- 1/2 Cup Brown sugar
- 1 1/2 Tablespoons pumpkin pie spice
- 1 teaspoon baking soda
- 2 Cups flour
- 1 Cup dark chocolate chips
Directions:
Preheat oven to 350 degrees. Thoroughly coat a loaf pan with cooking spray.
Whisk Greek yogurt, pumpkin, eggs, and peanut butter in a large bowl until it is a nice creamy consistency.
Stir in sugars, pumpkin pie spice, and baking soda. Stir in flour.
Stir about 3/4 cup dark chocolate chips into batter.
Pour into prepared loaf pan. Sprinkle the remaining chocolate chips over the top.
Bake for about 40-50 minutes, until a toothpick comes out clean at the edge of the bread.
Tip- at a 40 minute baking the middle will be a bit underdone which some people like. I baked mine for 45 minutes and the center was still a bit soft but perfect.
