Let me confess something I have a Latte addiction, specifically Vanilla lattes from Starbucks (no, this is not a sponsored post I just love their lattes!). It is a special treat for me to indulge in a nice latte once or twice a week. This Instant Pot Vanilla Latte Steel Cut Oatmeal incorporates healthy whole grains with the delicious flavors of a vanilla latte.
I have had this can of Irish Steel Cut Oats starting at me from my pantry shelf for over a month now. I have wanted to create a macro friendly breakfast with them but never got around to it. Ugghh, macros it is a love/hate relationship with them. You know a balance of Fats, Protein and healthy carbs, which is really hard for me since I am a devoted pasta and bread lover! Since I have been experimenting with my Instant Pot more it was the perfect time to create something delicious and macro friendly. Merging my love of Vanilla Lattes with The Irish steel cut oats seemed like the perfect combination. Steel cut oatmeal with a kick, made in 20 min or less!
Several baking recipes use Espresso Powder to give a hint of coffee flavoring, I actually use it in baking quite a bit like in Tiramisu. Since I had some leftover packets of Starbucks Instant Via Vanilla Latte powder I decided to use that instead, and I am so glad I did. The Starbucks Vanilla Latte Via gives the oatmeal a rich creamy flavor with a hint of coffee. Adding in some extra vanilla extract and a bit of cocoa powder makes for a delicious breakfast option. Heck it could even be considered a dessert with a nice dollop of freshly whipped cream!

Ingredients:
- 2 1/2 Cups water
- 1 Cup milk
- 1 Cup steel cut oats
- 3 Tablespoons sugar
- 1 packet Starbucks Vanilla Latte Instant Via
- 1/4 teaspoon salt
- 2 teaspoon vanilla extract
- 1 teaspoon baking cocoa powder, plus extra for dusting
- Whipped cream, for topping
Directions:
Add water, milk, oats, sugar, Starbucks Via, and salt to pressure cooking pot. Stir to dissolve Via latte powder. Lock the lid in place. Select high pressure and set 10 minutes cook time.
When cooking is complete, use a natural pressure release for 10 minutes. After 10 minutes, do a quick pressure release for any remaining pressure.
When all pressure is released, carefully remove lid. Stir vanilla extract, cocoa and additional sugar to taste.
Let sit five minutes until oats are desired thickness.
Serve topped with whipped cream and dusted cocoa powder.
