Ok back to my usual diet after all of the holiday gluttony. While it was utterly delicious it is time to get back on track and that means my daily protein smoothie.
Smoothies are the perfect way to get a nice serving of veggies and fruit into your diet plus you can get creative with the combinations. I typically make a protein smoothie every day for breakfast to start the day off right and the protein keeps the desire to snack away.
I was having yet another food/diet discussion with my good friend that teaches Dancer Sculpt classes and it turns out she is also a Beachbody coach. She gave me some samples of their protein powder to try out called Shakeology. Now I typically do not stray from food products I really like, for example my vanilla Whey protein I have used for years but wanted to try it out. I have to admit it is pretty darn good!
While professing my love for carrot cake in an earlier post for Carrot Cake Oatmeal Bites I mentioned the struggle to stay away from delicious carrot Cake cupcakes and finding healthier alternatives. Hence the Carrot Cake Smoothie. It is absolutely delicious and is garnished with my latest healthy sweet obsession Toasted Coconut Chips!

Carrot Cake Smoothie Ingredients:
- Ice
- ½ Cup lowfat milk
- ¼ Cup Orange Juice
- 8-10 baby carrots
- 1/2 Cup Fresh Pineapple diced
- 1 Tsp Honey
- ¼ Cup Vanilla Greek Yogurt
- 1 Scoop Vanilla Shakeology (or any vanilla protein powder will work) To Purchase Shakeology
- Toasted Coconut Chips for garnish
Directions:
Place all ingredients in blender. Blend until smooth and no large carrot chunks remain. Sprinkle toasted coconut chips on top.
Makes 2 servings (16 ounce)
