These last weeks of fall have been a bit crazy with Thanksgiving and work travel, you all know how it goes sometimes. I have been meaning to make these for quite some time and since my son has been on a major French Toast kick I had to convince him that these would definitely be worth straying from his usual weekend breakfast treat.
When I first stumbled across this recipe it immediately reminded me of a treat that my family makes every summer when we get together for our family reunion called widgets. They are pretty much fried biscuit dough rolled in cinnamon sugar. They are truly amazing! However in trying to stay somewhat with my fitness regimen I like the fact that these are baked so removing some of the calories, but yet they are still rolled in cinnamon sugar so one must make some sacrifices every now and then and just eat the donut darn it!!
These muffins are super flavorful turning your favorite apple cider into a fluffy, perfectly spiced moist muffin, and ohhh yeah covered in cinnamon sugar!!!
Apple Cider Donut Muffin Ingredients:
- 1 ½ Cup All purpose flour
- ½ Cup Granulated Sugar
- ½ Cup Light brown sugar
- 1 teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ¼ teaspoon Salt
- ¾ teaspoon Cinnamon
- ¼ teaspoon Nutmeg
- ¾ Cup Apple Cider
- 1 Egg
- ½ teaspoon Vanilla Extract
Topping Ingredients:
- 7 Tablespoons unsalted butter melted
- ¾ Cup Granulated sugar
- 2 teaspoons Cinnamon
Directions:
Preheat oven to 350 degrees. Grease a muffin pan (or use a silicone baking muffin mold like I did from Demarle at Home)
In a mixing bowl combine Apple Cider, egg and vanilla.
Using a stand mixer combine the flour, ½ Cup sugar, brown sugar, baking soda, baking powder, salt cinnamon and nutmeg. With mixer running on a low setting slowly incorporate the wet ingredients.
Mix and combine until the batter is smooth.
Using a large cookie scoop or ¼ Cup measuring cup divide batter into the muffin tin wells.
Bake for 15-18 minutes until a toothpick inserted comes out clean.
Immediately remove muffins from pan onto a cooling rack or cutting board.
Melt butter for topping. In a separate bowl combine sugar and cinnamon.
Gently brush and thoroughly coat a muffin with melted butter and roll in cinnamon sugar mixture. Continue with the rest of the muffin batch.
