On a recent vacation to Hawaii I was energized with how active people in beach towns are and how light and fresh they eat. I mean how could you not eat fresh with such an abundance of locally grown produce and the ocean to motivate you to run, swim or whatever you do for exercise.
Riding our bikes on the beach we came across a little Brazilian food truck. There were food trucks everywhere on the North Shore of Oahu but this one in particular caught my eye. They were serving these bowls filled with fresh fruit and something else that was such a dark color at first I thought it was chocolate. It was blended Acai and turns out it is a dark rich vibrant purple due to the natural color of the Acai berry.
Scanning over the menu there were so many options for toppings and all looked so amazing. I ordered the Acai Bowl with fresh banana, granola, honey and coconut. I am telling you it was LOVE at first bite. Where the heck have these been in my life, and how could I have not known about these delectable little fruit concoctions yet? HOW???
For the rest of our vacation I would ride my bike on the beach path to this little Brazilian food truck to get my Acai bowl fix for breakfast. Sitting on the beach savoring every bite of fresh deliciousness. Alas vacations have to end sometime and I vowed to recreate this amazing bowl to satisfy my intense craving for Acai now.
Acai Bowl Smoothie Ingredients:
- ⅔ Cup Frozen Blueberries
- 1 Frozen Banana
- ¾-1 cup Almond Milk (or milk of your choice) I used Coconut Almond Milk
- 1 Tablespoon Acai Powder
Acai Bowl Toppings:
- ½ Banana, sliced
- Fresh blueberries
- Granola of your choice
- Toasted Coconut Flakes
- Honey
Instructions:
Put all the smoothie ingredients into a blender
If the mixture is having trouble blending, add more Almond Milk or water
Blend until the smoothie is a sorbet consistency and smooth
Pour the smoothie mixture into a bowl
Top with desired ingredients
Serve and enjoy!
