Fall is finally upon us here is Phoenix, well at least it has been reaching the high 60’s at night which kind of feels like fall compared to the 100 degree plus weather we are used to. With the cooler temps comes fall cooking including soups and stews! I wanted to experiment a bit with my typical chili recipe we make every year so I decided to add some Moroccan flair to this One Pot Moroccan Spiced Chili.

Now it was not an easy decision to refine my families chili recipe as it is an heirloom recipe. We have been making this chili every year for a casual family Christmas Eve get together and for New Years. So needless to say when my hubby heard that I was changing it up with different spices he was a bit skeptical.
Typical chili’s include such spices like Cumin, Chili powder and Coriander. What I love about the mélange of Moroccan cooking flavors is that they also add some sweet with the spicy. Cinnamon and Cardamom are typical additions and while you would not think that these ingredients would taste that great in a spicy dish, the flavor combination just blew me away. To add these typical Moroccan flavors subtly to my One Pot Moroccan Chili recipe I used an infused Grapeseed oil from Oil & Vinegar. The Chardonnay Moroccan Grapeseed Oil is infused with dried chili, garlic, coriander, cumin, cinnamon, cardamom, clove, and cilantro providing a subtle yet well rounded flavor profile.
Not only are the flavors amazing in this chili and really well balanced between the spicy and sweet, it is super simple to make to. From browning the meat in the Moroccan grapeseed oil to the addition of all the other ingredients only one pot is needed. Which makes clean up well not enjoyable, but easier.

Ingredients:
- 3 Tbs Chardonnay Moroccan Grapeseed Oil (clink on ingredient link for how to purchase)
- 1 large yellow onion diced
- 1lb steak cut into small cubes
- 1lb ground bison or ground beef
- 4 cloves of garlic (or more if desired) minced
- 2 tsp black pepper
- 1 tsp Italian Sea Salt (click on ingredient link for how to purchase)
- 1/2 tsp red pepper flakes
- 2 Tbs Cumin (add more if you like)
- 1 tsp onion powder
- 1 tsp garlic powder
- 3 Tbs Chili powder
- 1 bottle of Guinness draught
- 24 oz can of tomato sauce
- 24 oz can of diced tomatoes
- 2 cans dark red kidney beans (drained and rinsed)
- 1Tbs tobasco
- 1/4 C brown sugar
- 2 Tbs molasses
- 1 Tbs yellow mustard
Directions:
Heat oil over medium heat in a big chili pot. Add onions and saute until soft. Turn heat to high and add the beef cubes and ground bison. Brown quickly for about 2 minutes. Lower heat to Medium and add the garlic into the meat mixture.
Lower heat to low and add all of the spices- stir to incorporate.
Add Guinness to the pot and let simmer for about 10 minutes. Add in remaining ingredients, stir and let cook for 30 min the give a taste to see if you would like to adjust any of the spices.
Set heat to simmer or low and cook for 3-4 hours.
Serve and enjoy!
