Hellooo Summer! It has officially reached 100 degrees here in Phoenix and our weekends are mostly spent at the pool and BBQ’ing. This Mango Avocado Salsa is the perfect appetizer to snack on while lounging poolside or entertaining friends.
Nothing beats the taste of fresh fruit and vegetables in summertime. I LOVE traditional salsas where the tomaotes are the stars, but this Mango Avocado Salsa combines the fresh flavor of sweet Mangoes and savory vegetables like corn, black beans, tomatoes and creamy avocado for the flavor profile win. This salsa is the cure for all your cravings both salty and sweet.
Not only is this salsa super fresh but also super quick and easy to put together. It is literally my go to appetizer in summer when we get invited to those last minute get togethers. Literally from dicing the veggies and mango to table ready in 10 minutes!! I can literally munch on this salsa with tortilla chips all day long, it is that good! Plus with it being made from fresh veggies and fruit I feel no guilt from my snacking! Now that is a win especially when you are trying to stay swimsuit ready this summer!
So whip up a batch of this Mango Avocado Salsa for your next summer fiesta and enjoy!
Ingredients:
- 2 Ripe Avocados, peeled and diced
- 1 can of whole sweet corn, drained
- 1 can of black beans, rinsed and drained
- 2 mango, peeled and diced
- 3-4 large tomatoes, diced
- 3 Green onion, sliced thin
- ¼ Cup Red wine vinegar
- 4 Tablespoons Extra Virgin Olive Oil
- Salt and Pepper to taste
- ½ bunch of Cilantro, roughly chopped without the stems
Directions:
In a large mixing bowl combine the corn, black beans, mango, green onion and tomatoes. Add the Red wine vinegar, olive oil, salt and pepper and toss to coat.
Gently fold in the cilantro and avocado to incorporate but be careful not to smoosh the avocado.
Serve with tortilla chips and enjoy.
Note: This salsa tastes better as it marinates in the vinegar and olive oil for a bit. If possible set in refrigerator for 30 minutes prior to serving to really bring out the flavor!

Mango Avocado Salsa recipe is a super easy to put together salsa recipe that is sweet and savory. Perfect for dipping chips, topping grilled chicken or fish.

- 1 can Whole kernel sweet corn (drained)
- 1 can Black Beans (rinsed and drained)
- 2 Mango (peeled and diced)
- 3-4 Large Tomatoes (diced)

- 1/4 Cup Red Wine Vinegar
- 1/2 Bunch Cilantro (chopped fine)
- Salt and Pepper (to taste)
